Flight 1: The Coastal Refresh (Light & Zesty)   $17.5

This flight focuses on high-acid, crisp wines that evoke the feeling of a sea
breeze. It’s the perfect opener for your flatbreads and lighter meats.

Sauvignon Blanc: We begin in the garden. This wine is all about green
energy—think freshly cut grass and lime zest. It is the essential partner for
our Basil & Mozzarella Flatbread.

Albariño: We travel to the Spanish coast. This wine brings a unique
saline minerality and peach note that acts like a squeeze of lemon over
the Jamón Serrano.

Dry Rosé: A sunset in a glass. This Provence-style pour offers delicate
wild strawberry notes and a bone-dry finish, designed to dance with the
sweetness of the Modena Balsamic on our bruschetta.

Flight 2: The European Classics (Elegant & Earthy)   $17.5

This flight celebrates the Old World style—wines that are built on tradition, structure, and
their ability to pair with aged cheeses and savory proteins.

Sparkling Rosé: A celebration of texture. The fine bubbles and crisp red
fruit provide a refreshing lift, acting as a palate scrubber for the silky, fatty
richness of the 10-Month Prosciutto

Chianti (Sangiovese): The heart of Tuscany. With its notes of tart cherry
and sun-dried herbs, this is the soulmate for our Heirloom Bruschetta and
the crystalline Parmigiano.

Tempranillo: The noble grape of Spain. Offering a sophisticated profile of
leather, spice, and plum, it is the only true match for the buttery, sheep’s milk
intensity of the Manchego

Flight 3: The Bold & The Beautiful (Rich & Structured)   $17.5

This flight is for those who love depth and weight. These wines are power-hitters that
stand up to our most flavorful, aged, and caramelized menu items.

Dry Riesling: Don’t let the name fool you—this is bone-dry and electric.
Its high acidity and floral jasmine notes cut through the nutty, alpine
sweetness of the 12-Month Emmentaler

Pinot Noir: The Velvet Glove. This wine is light in body but deep in flavor,
using its earthy cherry profile to bridge the gap between the sweet fig and
salty ham on our Fig & Prosciutto Flatbread.

Malbec: The Iron Fist. A plush, dark-fruited powerhouse. Its blackberry
and cocoa undertones find their perfect harmony in the caramelized,
butterscotch crunch of the 12-Month Aged Gouda.
